Triple Chocolate Muffins Recipe

Another recipe for you bc I am just LOVING baking at the moment. It’s fun, it’s therapeutic, it’s calming & you get to eat them at the end πŸ™‚

Below is the recipe for the Triple Choc Chip Muffins by Betty Crocker.

You will need:

  • Muffin Mix
  • 1/3 cup of vegetable oil
  • 2 eggs


  1. Preheat oven at 180 degrees.
  2. Add muffin mix, vegetable oil & 2 eggs in a mixing bowl and MIXXXXX.
  3. One this has been mixed thoroughly, use a spoon to spoon out some of the mix into your muffin cups (Make sure you fill this 1/3 of the way as these will rise dramatically.
  4. Once all muffin cups are filled, pop them into the oven for 20-25 mins (I tend to start watching mine at 15 mins & take them out a bit earlier to ensure they light, fluffy & moist).
  5. Allow this to cool on a cooling rack for about 10 mins before serving.
  6. Enjoy πŸ™‚


This is easy & simple, takes you about 40 mins in total, from the moment you start to the moment they are cooked & ready to eat πŸ™‚

Salted Caramel Cookies

Hope everyone is having a lovely Thursday – ONE MORE DAY UNTIL THE WEEKEND! Woohoo, short week as it was a public holiday on Monday for the Queens birthday, so I only had a four day working week πŸ™‚

Does anyone have anything fun/exciting planned this weekend? I know I will most certainly be doing some gym classes on Saturday & Sunday, I am very excited for those.

I did pilates for the first time last night, all I can say is I have VERY tight hamstrings & I felt like an awkward pretzel. But, over time I am hoping to become more flexible as I am struggling at the moment. Pilates was good for me bc you focused on your breathing, which is a big thing for me & my anxiety.


We are here because… I MADE SALTED CARAMEL COOKIES & I want to share the recipe & some photos with you.

Baking has become such a lovely hobbie to do on the weekends, either Saturday or Sunday I love to do some baking, I feel so content when I bake πŸ™‚

Let me know if you decide to cook these, they were DELICIOUS!

You will need:

  • Salted Caramel Cookie Mix
  • 4 tablespoons of butter
  • 1 egg



  1. Preheat oven to 180 degrees & put your mix into a bowl, crack the egg & pop it in, melt your butter & also put that in too.
  2. Start mixing w/ a wooden spoon to form a thick-like-batter, after this has been mixed start using your hands to mix the batter.
  3. Start rolling the dough to make a 3cm ball (Don’t make them too big as they will expand + flatten in the oven.
  4. Pop they tray into the oven for 25-30 mins. (My little trick here is to start watching them at about 15 mins – I take them out earlier & let them set on the cooling rack, that’s how you get soft & chewy cookies)
  5. Enjoy πŸ™‚


These were so easy to make, & I am so happy I made them, everyone loved them!

Cookies & Cream Cupcakes

Hope you all had a lovely weekend – HAPPY MONDAY!

I have so much to share with you but I’ll start by sharing a recipe of the yummy cupcakes I made on the weekend. (Everyone said they tasted amazing)

You will need:

Cupcake Mix:

  • Cupcake Mix
  • 2 Eggs
  • 1/2 a Cup of Milk
  • 3 Tablespoons of Butter


Icing Mix:

  • Icing Mix
  • 3 Tablespoons of Butter
  • 2 Teaspoons of Milk

Let’s do it:

  1. Pre-heat your oven to 180 degress – And, place 12 patty cases on a oven friendly tray.
  2. Place cupcake mix, eggs, milk, butter into a large bowl – Mix this so that there is no more powdery mixture & is a smooth consistency.
  3. Carefully place mixture into the 12 patty cases (Fill to about a half as the mixture will expand in the oven & you don’t want them to overflow.
  4. Bake for 20-25 mins, depending on how fast your oven is, check on these at about the 20 min mark.
  5. Once these are cooked, let these cool down whilst you prep your icing.
  6. Mix 3 tablespoons of butter & 2 teaspoons w/ your icing mix & mix this up until smooth & lather over your cupcakes (I didn’t do all my cupcakes with the icing, a few of the bad overflowy ones got the icing but didn’t make the cut for the photo, haha)
  7. And…. Enjoy πŸ™‚


I promote healthy living & good foods but this was a packet mix I couldn’t refuse to make.

Baking is very therapeutic for me, you feel accomplished after also bc you’ve created this from scratched.

Goodies From Houston, Texas!

Blogs flying all over the place today – 3 blogs and its not even 11:30am. WOO! I am on a roll today (Plus juggling a busy work schedule) I always save time to blog ❀

Carly is from Houston, Texas which is LITERALLY on the other side of the world to me.

Carly & I have been in discussion since before Christmas to do a blog/vlog on food from the opposite side of the world πŸ™‚ April has come & we are both at a good time to now be able to send this to one another πŸ™‚


Carly sent me Apple Jacks, Cheez-It’s & Twinkies.
I have never tried these 3 things ever, so I am SO excited to try these.
I will possibly do a blog/vlog over the weekend on me trying these.

In return, I will be sending Carly some Australian goodies (I can’t share as it’s a surprise for her, so once she receives them, I can share what they are) Also, once Carly does her blog/vlog I can re-blog it onto my page & you can see her trying the Australian stuff for the first time πŸ™‚
