Mozzarella Cheese Pastries

If you thought the spinach & ricotta pastries were easy, WELL… do I have news for you 😛 These mozzarella cheese pastries are SOMETHING ELSE! This literally took me not even 5 mins to prep & this was sooooo delicious – the cheese was so stringy when eating it (stringy cheese, mm, just how I like it!)

Ingredients:

  • 2 cups of mozzarella cheese
  • 1 egg, lightly beaten
  • 8 sheets filo pastry
  • 2 tablespoons olive oil
Method:

1. Preheat oven to 180°C. Lightly grease 2 baking trays.

 

2. Cut filo pastry into desired shapes (I did mine in squares)

3. Brush pastry lightly with oil. Place mozzarella onto the filo pastry & wrap/roll the way you’d like.
4. Brush pastry with egg. (this gives the pastry a crunchy texture) Place onto baking tray.
5. Bake for 25 to 30 minutes or until golden and crisp. Place 3 onto each entree plate and serve hot.

Spinach & Ricotta Pastries

This is honestly the most easiest ting in the world to make & it is suppppper delicious! I am an advocate for simple recipes 🙂

These spinach & ricotta pastries took about 40 mins in total to make (10 mins prep, 30 mins to cook) & afterwards, I couldn’t wait to eat them – they were just great! (Call me Chef Anita!)

Below is the recipe:

Ingredients:IMG_4318

1 bunch spinach, leaves removed, washed and chopped

500g fresh ricotta cheese

1 egg, lightly beaten

 

8 sheets filo pastry

 

2 tablespoons olive oil
Method:
1. PrIMG_4320eheat oven to 180°C. Lightly grease 2 baking trays. Cook spinach in a small saucepan of boiling salted water for 30 seconds or until just wilted. Drain and refresh under cold water. Drain well.

2. Squeeze all moisture from spinach. Place into a mixing bowl. Add ricotta  &egg. Season with salt, pepper & some herbs. Mix well to combine.

 

3. Place 1 sheet of filo onto work surface. Cut into squares or strips. (Keep remaining sheets of pastry covered with a damp paper towel so they don’t dry out)
4. Brush pastry lightly with oil. Place a tablespoon of spinach mixture in 1 middle of filo and fold in the middle. Brush pastry with olive oil. Place onto baking tray. Continue with remaining pastry and spinach filling.

 

5. Bake for 25 to 30 minutes or until golden and crisp. Place 3 onto each entree plate and serve hot.IMG_4324

Making this was super fun  & simple, you can go ahead & add anything to this to give it more flavour ie mushroom etc.

Choc Banana Bites w/ Mnms

I just made the cutest little desserts, ever! Lol, super quick & simple.

Haha, unfortunately this recipe is sitting in my ‘healthy recipes’ section of my blog but HEY, there’s bananas, therefore it’s healthy 😛

I think we all need to treat ourselves every now & again 🙂

IMG_4265All you need is:

  • 1 x banana
  • 1 x handful of baking choc chips
  • 1 x handful of mini mnms

 

 

 

 

IMG_4270Once you have these three things, its simple:

  1. Cut your banana into pieces approx 1cm apart & place on plate or tay.
  2. Melt your baking choc chips (My melt time took 3 x 40secs)
  3. Pour the melted chocolate over the banana pieces.
  4. Place a few mini mnms on top (the left over mini mnms, you can enjoy!)
  5. Refrigerate for 30 mins.. than ENJOY 🙂

Chicken + Spinach Gluten Free Pasta

I made the most delicious pasta dish, I really enjoyed this, there was a lot of flavour. And, you could really taste everything that was added to this dish.

I have been enjoying cooking w/ gluten free foods, I am not coeliac but chose to eat gluten free food as it’s less harsh on the tummy, doesn’t make me feel bloated & is easy on the digestive system too.

Below is the recipe to how I have made this delicious dish.

INGREDIENTS

1 x shredded chicken

1 x tablespoon of extra virgin olive oil

1 x tablespoon of salt

1 x tablespoon minced garlic

1 x 500ml of red pasta sauce

1 x 500g of gluten free fettucine

1 x cup crumbled feta

0.5 x cup of parmesan cheese

2.5 x cups of fresh spinach

INSTRUCTIONS

  1. Bring water to boil in a pot & add salt, once boiled add pasta to let cook.
  2. Begin to shred the chicken & put this aside in a bowl.
  3. Put oil in a large frying pan, & add garlic, let simmer.
  4. Add your spinach & let this wilt, next add your shredded chicken to the pan followed by some parmesan cheese.
  5. Bring your red sauce in a separate pan to heat.
  6. Once your sauce is hot, add this to the pan w/ your spinach & chicken – by this time your pasta will be cooked, drain the pasta & add to pan.
  7. Mix everything together in your pan, and add a little bit of the crumbled feta.
  8. This is now ready to be served, upon serving add the rest of the feta to the top of the pasta.
