Friday night, my weekend started as soon as I finished work on Friday – I love a good Friday afternoon, I get into weekend mode & I am excited for the weekend 🙂

This was the pretty view that I got to witness from my office on Friday night ❤ How beautiful is it?

When it is daylight savings, I get to witness the most amazing sunsets 🙂

I am a lover of sunrises & sunsets ❤

My weekend consisted of a lot of food 🙂 Nom, nom, nom, nom ❤

I had the most yummiest breakfast on Saturday morning, how yummy does it look? Can’t go wrong w/ some smashed avo, poached eggs & feta on sourdough bread 🙂

I also learnt how to knit on Saturday, I remember attempting to knit as a child but I forgot so I got taught again & that was SO fun, I am in the process of making a scarf, I can’t wait to show you once I am finished.

I also caught up on House Rules a show that a group of 5-6 couples compete against each other to renovate & design rooms & get points on their work.

Saturday night consisted of cheese board & baking – As you all know, I love baking, baking is so therapeutic for me ❤ I made Salted Caramel Cookies (Linked my recipe, check it out) I don’t bake them for too long bc I love when they are soft, chewy & gooey 🙂

I love how much I have been baking lately, every weekend I’ve been baking some goodies & I absolutely love it ❤ Does any one feel that baking does some wonders to the brain? I think it could be the sweet cake smell 😛

On Sunday, there was more food (Ofcourse there was) I absolutely loved this breakfast too most certainly a difference to the day before.

The food was delicious & the sun was shining, it was a great start to a Sunday – This picture deserves to be BIG & LANDSCAPE! Look at that breakfast spread – I’ve never experienced a breakfast like that. IT WAS AMAZING! Certainly couldn’t finished all of it but it was SUPER yummy. img_4272

I went & chose my new glasses, so I am very excited for that 🙂 I wear black ones at the moment & I feel they are too harsh on my face 😦 So, I decided I am going to get new ones, these ones are so nice & a little out of my comfort zone BUT I am willing to challenge my self & take new leaps. I’ll show you all my new glasses when they arrive 🙂

I also purchased a new yoga mat, I got a lovely grey one – SCREAMS MY NAME – My life palette is literally black, white or grey! I can’t wait to show you all my new mat 🙂 I love it AND… I get to use it tonight at the gym 🙂

In the night, we had a family dinner & had family over, sat by the fire place, had dessert & ofcourse some tea 🙂

Then I had a shower, did a lovely face mask packed my gym bag & set out my clothes for work the following day then went to bed 🙂

Salted Caramel Cookies

Hope everyone is having a lovely Thursday – ONE MORE DAY UNTIL THE WEEKEND! Woohoo, short week as it was a public holiday on Monday for the Queens birthday, so I only had a four day working week 🙂

Does anyone have anything fun/exciting planned this weekend? I know I will most certainly be doing some gym classes on Saturday & Sunday, I am very excited for those.

I did pilates for the first time last night, all I can say is I have VERY tight hamstrings & I felt like an awkward pretzel. But, over time I am hoping to become more flexible as I am struggling at the moment. Pilates was good for me bc you focused on your breathing, which is a big thing for me & my anxiety.

We are here because… I MADE SALTED CARAMEL COOKIES & I want to share the recipe & some photos with you.

Baking has become such a lovely hobbie to do on the weekends, either Saturday or Sunday I love to do some baking, I feel so content when I bake 🙂

Let me know if you decide to cook these, they were DELICIOUS!

You will need:

  • Salted Caramel Cookie Mix
  • 4 tablespoons of butter
  • 1 egg

Method:

  1. Preheat oven to 180 degrees & put your mix into a bowl, crack the egg & pop it in, melt your butter & also put that in too.
  2. Start mixing w/ a wooden spoon to form a thick-like-batter, after this has been mixed start using your hands to mix the batter.
  3. Start rolling the dough to make a 3cm ball (Don’t make them too big as they will expand + flatten in the oven.
  4. Pop they tray into the oven for 25-30 mins. (My little trick here is to start watching them at about 15 mins – I take them out earlier & let them set on the cooling rack, that’s how you get soft & chewy cookies)
  5. Enjoy 🙂

These were so easy to make, & I am so happy I made them, everyone loved them!

Happy Wednesday – It’s Wednesday here in Sydney, Australia.

WHOOOOOOOOAHHHHHH! What a crazy week its been! So many great things have been happening ❤ I’ve just caught up on all my comments that I was SEVEN days behind in.

I took a few days off & went away to Palm Beach in Sydney, Australia – it was such a good getaway to switch off ❤ I shall blog about this soon & share some pictures etc.

I changed gyms & am so happy at my new gym. The people, the environment, the classes, the equipment, the bathroom, the kitchen area – It’s all amazing, I know my membership money is going to great things there.

I’ve been baking heaps – I love it, it takes me to another place ❤

I’ve been working so hard on my bullet journal (There is a post on that coming soon!) I am loving recording the way I feel, my steps, my physical activity etc.

I have been wearing my fitbit like crazy & have been in competitions with friends & family? Do you have a Fitbit? We could be Fitbit friends & challenge each other ❤

I know I am a little behind in emails also, so if you’ve sent me emails & I haven’t responded, I’ll be getting to that today ❤ I got so many emails from lovely people checking on me asking if I am okay bc everyone was seeing that I hadn’t responded to comments for over 6-7 days. You are all too kind & sweet to me ❤ ❤ ❤

We’ve jumped up a few thousand since my last post & since my absence. 85,000 – I cannot believe how far we have come ❤ Thank you for your kind & loving support, it does not go unnoticed, I am so happy I can use this platform to get things off my chest ❤ I love that I am not alone & there are so many people that can relate to me also ❤

Gluten Free Brownies – We Bought A Brownie Maker.

So I decided to buy a BROWNIE MAKER, yes you heard right – a brownie maker – it makes brownies in less than 8 minutes. I was gobbsmacked, bc I literally have a brownie obsession, its not normal, haha.

I used the Betty Crocker Gluten Free brownie mix as a trial run w/ this particular appliance & I say I did quite well.

WHAT YOU NEED FOR THIS GLUTEN FREE BROWNIE RECIPE
  • 1 packet (450g) Betty Crocker Devil’s Food Brownie Mix.
  • 2 Eggs
  • 60g margarine
METHOD:
  1. Preheat your brownie maker to ensure its heated up & ready to go.
  2. Melt the margarine in the microwave w/ 40 sec intervals, stir until melted.
  3. In a large bowl combine w/ eggs one at a time, stirring constantly so that the eggs don’t solidify.
  4. Add mud cake mix and continue to stir to a smooth consistency.
  5. Pour the batter into the brownie maker than put the brownie cutter insert inside & close the lid.
  6. Wait approx 7-8 minutes for the brownies to cook.
  7. Once the brownies are cooked, lift the lid & the cut inserts, lift out the brownies & place onto plate to cool.
