Gluten Free Choc Fudge Brownies

I made the most amazing gluten free choc fudge brownies, (they are guilt free, which I love!)  I love them – They are so simple to make, even though they are gluten free – I love the taste of them.

Recipe is below 🙂

You can buy the mix from the below website:

Chocolate Cake Mix

  • 1 packet (450g) Well and Good Gluten Free Chocolate Mud Cake Mix.
  • 3 Eggs
  • 100g margarine
  • 150g milk chocolate pieces
  1. Preheat your oven to 175°C (160°C fan forced).
  2. Grease and/or line a 20cm x 20cm tin.
  3. Melt the chocolate and margarine in the microwave w/ 40 sec intervals, stir until melted.
  4. In a large bowl combine melted chocolate and eggs one at a time, stirring constantly so that the eggs don’t solidify.
  5. Add mud cake mix and continue to stir to a smooth consistency.
  6. Pour the batter into prepared tin and set to bake for 40 – 45 minutes. (With my oven, my brownies can be ready within 25-30 mins, so keep an eye on your brownies as you don’t want to over cook them!)
  7. Make sure the edges are cooked through but the middle is still liquidy (is that a word?) as when you are cooling this, it will set. (You can check this w/ a toothpick or fork)
  8. Let it cool for about 10 mins, than cut into desired shapes.

Cocoa Choc Chip Muffins (Gluten Free)

What a productive weekend I had! Baking, baking & more baking! I purchased a pack of 4 different great gluten free packs from The Protein Bread Co to try – I must say I was surprised at how good it tasted.

I had purchased:

  • Muffin Mix
  • Pizza Base Mix
  • Pancake Mix
  • Bread Mix

It was exciting making these – I highly recommend them.

You’ll need:

  • 300g choc chips
  • 3 tbsp of cocoa
  • 4 eggs or 240g egg white
  • 200mL almond milk (or milk of choice)
  • 1 packet of Protein Muffin Mix

Set your oven to 180°C and preheat for 20 minutes. Spray a non-stick muffin tin with oil, or line with muffin wrappers.

Step 1: Mix
Empty this packet into a large mixing bowl and make a well in the center. In another bowl, whisk together the eggs and milk. Pour the egg mixture into the dry mix. Add the cocoa & choc chips and gently fold to combine.

Step 2: Spoon
Spoon the mixture into the muffin tin and decorate with a few extra choc chips or chocolate pieces on top.

Step 3: Bake
Bake for 20-25 minutes at 180°C. Let your muffins cool in the tin for 5 minutes, then transfer to a cooling rack.
