Spinach & Cheese Omlette

What a beautiful Sunday morning yesterday, woke up, did all the washing, washed my sheets & blankets & had breakfast in the sun – below is the recipe of the spinach & cheese omelette that I made, it was delicious! 🙂

Ingredients:

  • 2 large eggs
  • 2 tbsp of almond milk
  • 1 tablespoon butter
  • 1 cup coarsely chopped spinach
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup (1 1/2 oz.) mozzarella

Method:

  1. Mix eggs and 2 Tbsp. almond milk in a bowl until well mixed. Melt butter in an 8-inch nonstick skillet over medium heat; Add egg mixture & salt.

  2. Lift and Tilt; gently lift edges of omelet with a spatula, and tilt pan so uncooked egg mixture flows underneath, cooking until almost set (about 1 minute). Add the spinach & let this wilt – Cover skillet, and cook 1 minute.

  3. Fold and Serve. Sprinkle omelet with cheese and pepper. Fold omelet in half, allowing cheese to melt. Slide cooked omelet onto a serving plate, and season with salt to taste.

Berry Banana Protein Smoothie

This smoothie that I made over the weekend was DELICIOUS! I loved it.

It was so flavorsome, it had a mixture of different fruits & when combined together was really tasty.

Below is the ingredients that I used to achieve this 🙂

  • 1 serve Amazonia Raw Vanilla Protein Isolate
  • 250ml almond milk
  • 1 x banana
  • 1/2 cup of strawberries
  • 1/2 cup of blueberries
  • 1/2 cup of raspberries
  • 1 tsp vanilla bean powder

Combine ingredients in blender. Serve immediately and enjoy!


 

Amazonia Raw Protein Isolate

Where have I been? I will not lie, my mind has been literally everywhere.

I am not looking for sympathy & I will not give excuses – I just truly have been feeling a bit mentally & physically off – & I don’t want to portray that particular attitude over my blog. I have tried this particular protein in the past & really liked it – it taste like a vanilla milkshake 🙂

There are so many options that you can put this w/ – I personally choose to put this w/ almond milk, it gives it a creamy consistency (which I like). It also consists of all the good stuff like living, raw enzymes, high amounts of branch chain amino acids — important for muscle growth — and is even alkalizing for the body, which we know is good for optimal health.
