What a productive weekend I had! Baking, baking & more baking! I purchased a pack of 4 different great gluten free packs from The Protein Bread Co to try – I must say I was surprised at how good it tasted.

I had purchased:

  • Muffin Mix
  • Pizza Base Mix
  • Pancake Mix
  • Bread Mix

It was exciting making these – I highly recommend them.


You’ll need:

  • 300g choc chips
  • 3 tbsp of cocoa
  • 4 eggs or 240g egg white
  • 200mL almond milk (or milk of choice)
  • 1 packet of Protein Muffin Mix

Set your oven to 180°C and preheat for 20 minutes. Spray a non-stick muffin tin with oil, or line with muffin wrappers.

Step 1: Mix
Empty this packet into a large mixing bowl and make a well in the center. In another bowl, whisk together the eggs and milk. Pour the egg mixture into the dry mix. Add the cocoa & choc chips and gently fold to combine.

Step 2: Spoon
Spoon the mixture into the muffin tin and decorate with a few extra choc chips or chocolate pieces on top.

Step 3: Bake
Bake for 20-25 minutes at 180°C. Let your muffins cool in the tin for 5 minutes, then transfer to a cooling rack.
